Eierkoeken (egg cakes)

Today I’m going to show you how to make ‘eierkoeken’ (that's how we Dutch call it). The direct translation of eierkoeken is egg cakes and that’s how I’m going to call them from now on. These egg cakes are simple to make and only take about 30 minutes. With this recipe you can make about 6 egg cakes. Egg cakes are usually eaten as a snack or you can eat them with or as breakfast.


Ingredients:
-      2 eggs
-      100 grams of sugar (3,5 ounce)
-      The zest of half a lemon
-      100 grams of flour (3,5 ounce)
-      ½ teaspoon of baking soda
-      Pinch of salt

Preparation:

Eggs with the sugar after been beatenBeat the eggs with the sugar until the sugar has dissolved and the mixture has thickened. Put the zest of the lemon with the flour (sifted), baking soda and the pinch of salt in the egg-sugar mixture, then, fold in with a spatula. Make sure not to fold too long or else all the air will escape out of the mixture. 

Get a baking plate lined up with baking paper. Get a spoon and put two drops of the mixture on the baking paper, make sure to leave some room between them. Do this until you run out of mixture. Bake the egg cakes at 180 C˚(or 350 Fahrenheit) for about 10- 15 minutes until they have a nice golden-brown color. Not too long or else they will dry out! 

You can now enjoy your homemade Dutch ‘eierkoeken’ 
The eierkoeken can be eaten with some butter or just without anything. For a little variation you can add chocolate bits, raisins or cranberry’s to the mixture.

Introduction


First off let me just introduce myself. My name is Jesper, I’m  a boy living in the Netherlands and I’m interested in cooking. Since I was young I’ve always been interested in cooking; just making stuff and tasting it is something I can really enjoy, it relaxes me and gives me the time to think. I’m not always that good with words and grammar so sorry if I misspell some things.

I have one older sister named Karlijn who has several blogs (links at the end of this post). She is very interested in history and likes to be creative. Besides my older sister I have one more sibling and that’s my little brother. His name Erben and he is very interested in soccer (or football, whatever you want). He is very good with words and can easily write a good story. Besides my siblings I have of course a mother and a father. My mother is called Carrie works at a nursery home and is very spontaneous.

My dad’s name is Bas and he normally fixes concrete as a job, but at the moment he is unemployed. Now that you know some things about me and my family let’s talk about the blog. The reason I want to make this blog is to show the world that the Dutch culture is more than weed, hookers and cheese. I want the world to meet the specialties of the Dutch kitchen and for them to enjoy the delicious treats we have here. Thanks for reading this introduction!
